Hello my foodie friends and Welcome to Kayla’s Kafe, a place where I hope to inspire a better you! Finding my way around the kitchen was not an easy task, it took a long time for me learn the very basics of how to even choose a good vegetable, the difference between parsley and cilantro and how to put it all together. I have never been the type of person that has been able to look at a map or a recipe and take it in the right direction. I have to see it be done. Since I have overcome my fears of scorched dinners ( we had many) and gross dishes that the cat wouldn’t even eat ( we had plenty of those too) I have realized that cooking can be very simple. I do not have fancy cookware, although the pennies in my piggy bank with go to all pink cookware It’s just a matter of understanding that cooking takes time and planning. This is where I come in, I am going to show you ways to be able to cook quickly and healthy right here in my very own kitchen. I will choose one meal a week, some that I created and others will be recipes geared for my breastfeeding mommies and my friends that have undergone weight loss surgery.
We all know we live in a society where we are used to instant gratification and eating on the run. Because of this lifestyle my family had to undergo a transformation. We were being financially and physically burdened by the meals on the go. I did not understand the importance of healthy eating until I became pregnant with my third child and ever since then I have been working hard to reinstitute the values of eating at home as a family and teaching my kids how to pick fresh fruits and veggies, how to prepare them for a meal and even how to cook them. Don’t get me wrong we are a working progress and still eat outside of the home and everyday is a challenge for us just like anyone else. Not every recipe here will be healthy or from scratch, although most of them will be from scratch. I to am on a journey to creating a healthier environment and food source for my children and I want to share the ups and downs of this journey with you all and also share the knowledge of good health and food that I am learning along the way.
Currently, I am learning quite a bit from a very good friend of mine Liz Montgomery she owns and operates The Lucky Lizard Ranch. We are moving from grocery store organics to fresh off the farm veggies. I also am transitioning my family from industrialized whole milk from the grocery store to raw cow’s milk from her farm as well as fresh eggs. I have also learned very much from my sister, Shannon, who has struggled with various health issues and has found natural ways to manage pain and increase better health for her and her children starting with our stomachs. Yes thats right your health starts in your stomach. I couldn’t believe that either. Along with sharing recipes I will share natural rememdies that I have personally found useful and helpful.
As I stated before my family struggled with the damnation of fast food, I call it a damnation because it damn near cost my husband his life. When we met in 2006 he was fit, strong and healthy at 200lbs. By the birth of our first child he had gained 80 extra lbs. I want to also share his courageous story of how he overcame obesity through weight loss surgery. His last weigh in he was 315 lbs in the summer of 2011. He now currently weighs 176 lbs. He did not choose to journal, but I did for him without him knowing. I documented many things he struggled with during this time and he is allowing me to share them with you all in hopes to also inspire a better you for yourself and your family too.
